Dum Aloo - Dum Aloo Recipe

About the dish:
This a very good dish. This goes very well with Poori. This has to be planned a day in advance because the baby potatoes needs to be marinated overnight in the masala.

Procedure:
Wash 500gm baby potatoes (for 3 people, increase accordingly for more number of people)




Masala for marinating the potatoes:
In a mixer grinder...

Add:
1 spoon jeera
1/2 spoon souf
2 spoon red chilli powder
7 pods of garlic into a paste adding little water.

Take out in a bowl and to this paste....

Add:
1 cup of tomato puree
1 spoon of coriander powder
1 spoon of sugar and salt and mix well


For Tomato Puree:

Ready made tomato puree can also be used or boil 3 whole tomatoes in a pan with water till the skin comes out. Cool the tomatoes and peel the skin and run the tomatoes in a mixer grinder to get the puree.


For Aloo: (Potatoes)

Now peel each potatoes using a peeler and prick with a fork (this is very time consuming process as the potatoes are very small and difficult to handle!!)
Soak in hot salt water for 30-40 minutes.
Now drain the water and mix the potatoes in the prepared masala mixture.
Mix well so that every potato is coated well. Rest this potato over night out side ( not in the fridge).
Next morning take a big thick bottomed kadai and add 1/2 a cup of oil. ( it soaks a lot of oil).
Heat the oil and add 4 finely chopped onions  1 spoon of haladi and saute for 2 minutes. Now add the marinated potatoes along with all the masala and mix well.
Cover and cook stirring in between. If it becomes dry add more oil.
Keep cooking and stirring till the masala turns brownish and the oil starts leaving the pan. Adjust salt if required. garnish with lots of coriander leaves.
( If peeling of raw potatoes are difficult then boil the potatoes taking care  not to  over boil them. Now  the skin comes out easily. prick each potatoes and then  marinate in the masala).
